"Natural flavors" is one of the most common — and most misunderstood — items on an ingredient list. It shows up in everything from sparkling water to protein bars, and most people have only a vague sense of what it actually refers to.
What the term actually requires
In the U.S., the FDA defines "natural flavor" as a flavoring substance derived from a plant or animal source — spices, fruit, vegetables, herbs, meat, or similar — rather than being chemically synthesized to imitate a flavor. The regulation is about the origin of the flavor compound, not how heavily it was processed to get there, which is the source of most of the confusion around the term.
"Natural" doesn't mean simple
A "natural flavor" can still go through significant laboratory processing — extraction, distillation, or concentration — before it ends up in a product, and it's often blended with other ingredients like solvents or preservatives to stabilize it for shelf life. A strawberry-flavored drink's "natural flavor" isn't necessarily crushed strawberries; it may be a compound isolated from a completely different natural source that happens to taste similar. Flavor houses that formulate these blends generally treat the exact recipe as proprietary, which is part of why the ingredient list can only ever say "natural flavor" rather than listing every individual compound involved.
How it's different from "artificial flavors"
"Artificial flavor" describes a flavor compound synthesized to not originate from a natural source, even if the resulting molecule is chemically identical to one found in nature. In practice, the finished flavor compound in a "natural" and "artificial" version of the same flavor can be extremely similar or even indistinguishable in a lab; the label reflects the source and manufacturing pathway, not necessarily a meaningful difference in safety or how the body processes it.
Why the distinction exists at all
The natural-versus-artificial distinction traces back to food regulation written well before modern flavor chemistry existed, at a time when "derived from a plant or animal" was a reasonably meaningful proxy for how a substance was made. Modern lab techniques have narrowed the practical gap between the two categories considerably, which is part of why some food scientists consider the distinction more historical than functionally meaningful today, even though it remains a formal legal category on the label.
This has led to a fair amount of consumer confusion and, at times, litigation over what "natural" should reasonably be expected to mean on a product that also contains genetically modified ingredients or synthetic preservatives elsewhere on the same label. The FDA has periodically sought public comment on formalizing a clearer definition of "natural" as a standalone term, separate from "natural flavors" specifically, though as of now no comprehensive formal definition covers the word across every use on a food package.
What it doesn't tell you
"Natural flavors" says nothing about sodium, added sugar, or overall nutrition quality — it's a single ingredient-list line, not a health claim, even though it often appears on packaging that also emphasizes "clean" or "simple" ingredients. A product can list only natural flavors and still be high in sodium or added sugar; the two things aren't connected.
Should you avoid products that list it?
Not on this basis alone. "Natural flavors" is present in a huge share of packaged food and is generally recognized as safe by regulators; the ingredient itself isn't a red flag for blood pressure, cholesterol, or blood sugar management the way sodium or added sugar further down the label might be. The one exception worth knowing: a small number of people have specific allergies or sensitivities to whatever plant or animal source a natural flavor happens to be derived from, and because the source isn't disclosed on the label, that can occasionally be a real practical concern for someone with a known reaction, worth raising with an allergist if it applies to you.
Manufacturers are required to disclose the nine major allergens recognized by U.S. law separately, in plain language, regardless of whether they appear inside a "natural flavor" blend or elsewhere in the ingredient list — so a milk- or soy-derived natural flavor, for example, would still trigger an allergen disclosure even though the flavor compound itself isn't spelled out by name.
Where your attention is better spent
If you're scanning a label quickly, it's more useful to spend your attention on the nutrition numbers — sodium, added sugar, saturated fat — than on parsing exactly what's inside a "natural flavor" blend. Those numbers are standardized, measured, and directly comparable between products in a way that a flavor-sourcing distinction simply isn't.
This is a useful pattern to recognize beyond just "natural flavors" specifically: a number of ingredient-list terms describe origin, sourcing, or manufacturing process rather than nutrition content, and it's easy to let a term that sounds meaningful pull attention away from the numbers that actually matter for blood pressure, cholesterol, or blood sugar management. Getting comfortable ignoring sourcing language and going straight to the nutrition facts panel is a small habit that saves real time over the course of a typical grocery trip.
