"Enriched" and "fortified" sound similar and often get used interchangeably in everyday conversation, but they describe two genuinely different things a manufacturer can do to a food's nutrient profile.

Enriched means added back

"Enriched" describes a food that lost nutrients during processing and had some of them added back to restore roughly the original level. Enriched white flour, for example, has iron and several B vitamins (folic acid, thiamin, niacin, riboflavin) added back after refining strips them from the wheat kernel.

Fortified means added in

"Fortified" describes a food that had nutrients added that weren't naturally present in meaningful amounts to begin with. Fortified orange juice with added calcium or vitamin D is the classic example — the fruit itself doesn't naturally carry much of either.

Fortification and blood pressure/cholesterol considerations

Fortification is generally neutral to positive for someone managing blood pressure or cholesterol, since it usually targets nutrients like calcium, vitamin D, or B vitamins rather than adding sodium or saturated fat. The one category worth a closer look is fortified snack foods and drinks marketed heavily around a single added nutrient, where the fortification claim can sit on the front of an otherwise high-sodium or high-added-sugar product — the same "flip it over" habit that applies to other front-of-package claims applies here too.

Salt is itself a fortified product in most cases: iodized salt has added iodine, a nutrient the body needs for thyroid function that historically caused widespread deficiency before fortification became standard practice in the early 20th century. This is worth mentioning specifically because someone reducing sodium intake for blood pressure reasons is, by extension, also reducing their iodine intake from that source if iodized salt was a meaningful part of their diet, which is a reasonable thing to be aware of and, if relevant, to get other iodine sources like dairy, seafood, or eggs into the diet instead.
